Homemade Raspberry Ice Cream Recipe You Will Love. Only Takes 10 minutes!

- 125g of raspberries (fresh or frozen)                                                                                                   - 250ml of milk or a non-dairy alternative

- 130g of plain Greek yogurt

- 2tbsp of honey

- 1tbsp of lemon juice

Method:    

1. Line a loaf tin with cling film. Put the raspberries, milk, yogurt, honey and lemon juice in a blender or food processor. Blitz until smooth.

2. Pour our mixture into the loaf tin and level the top. Cover tightly with 2 layers of cling film. Freeze for 30-40 min. Use a sharp knife to make 10 equally spaced slits in the top of the cling film. Insert a wooden lollypop stick into each slit and push into the ice cream mixture.

3. Freeze for a further 4h until frozen. Remove the cling film from the top of the tin, then use the remaining cling film to lift the whole block out of the tin. Slice the block into 10 squares, making sure the lollypop stick is in the middle of each square. Serve straightaway.
